Default xray m18mt

i just put a 3s lipo in my xray and the truck is uncontrolable, i was thinking of going with a 2s lipo or maybe even a nihm pack.i have the mamba 25 at its lowest power setting but you just can't drive it,no traction.

What is the gearing and motor Kv?

Changing from 7.4v to 11.1v is quite a change, you may want to use a smaller pinion and/or smaller wheels/tires with more grip (like the m18t).
On hard compound stock 70mm tyres I found it a bit of a handful and have to feed the power in carefully to maintain grip. Make sure the ESC throttle endpoints match your Tx throttle endpoints, for a full range and resolution, you don't want your throttle to feel like a switch (full on or off), making it hard to manage RPM in the air when jumping. Particularly with the larger inertia of the M18MT wheels, if you don't have fin control over the wheel RPM in a jump then the truck is more likely to flip or endo nose first over.

Where are you driving it and what tires? The stocks ones aren't meant for super high traction for smooth surfaces.

A dirt track with dust right? Not like a mudbog or rocky ground?

You will have more fun seeking tires of a different design. Something in a mini-pin. Or this:
