Can you take a picture of you plane from the front, back and sides. I think it is a dihedral issue.
If you are used to flying an Extra or Yak or any other plane of that type you may be expecting to much from the Gee Bee. This is not a Carden Extra! When I fly my Waco for a while and then jump back on the Gee Bee it scares the pants off me.
I will check my dihedral, C/G and a few other things and we can compare.
