Why not put the power setup your talking about in an EF1 electric racer. They are suppose to be quick on a 4cell, with the right 6 cell setup up they might give the Q40 guys a run for their money.
Go with something like the Proud Bird from Tower Hobbies, it also looks right with a prop on the front.

These planes will be slow on a 6S 5,000 pack if it will fly anyway. maybe a 6S 2500 on the right motor.
Go with the 163 in a Pusher configuration.
