Default Hobbico Avistar conversion to electric

I am looking for help re: my performance numbers after switching to an electric motor. Here's what I have.

Golden Power 4120-7 motor (530kv at a max of 1000Watts.)
Turnigy Plush 60A ESC
4S 3600 Lipo 30C

Golden Power recommends a prop that will pull 800 watts and between 25-55 Amps (APC 12x6 or 12x8).

Here are the test numbers indicated on my watt meter with each prop. The battery is producing 15.29 volts.

12x6
Avg watts - 272
Avg amps - 20.3

12x8
Avg watts - 325
Avg amps - 22.44

It looks like I am a long way from the ideal numbers according to Golden Power, so that would make me think I will have an underperforming airplane. My question is should I move up to a larger prop (say, a 13x8) that would draw more current and total watts, or should I get a 5s or 6s battery that will drive the motor faster with the higher voltage?
