Single servo on the elevator works just fine. The extra servo in the tail requires about 16oz more in the nose to balance. I have used War Bird Colors with good results. Clean the surface well then rough it up. The challenge is on the outer wing panels where the simulated fabric is. Much sanding and you loose the effect. I use a poly clear.
