Yes, you could do that with 2 program mixes. For the first mix, set up an aileron to aileron mix, assign the mix to the switch of your choice, then set the rates at -100% for both directions of aileron (move the aileron stick to switch between the 2 rates of the mix). Then set up an aileron to rudder mix, assign the mix to the same switch as the above mix, and set the rates at +100% in both directions of aileron.
