For the flap pot, you can go to the flap pot function and inhibit it. For other channels the best way to eliminate the function of the pot or switch is to set up a program mix, mixing the channel of the pot or switch to itself, and set both of the rates at -100%. For your second aileron channel, you can simply activate flaperon in the wing type function rather than using a program mix.
