I forgot to answer your question about the servos:
I use HiTech HS-225BB for the elevator and aileron and a HS-81 for throttle. I run two 2-25 pushrods to the elevator (left and right side) and solder them together near the servo control arm. The HS 225BB servos are popular with the Quickee-500 crowd and they seem to perform well at high speed.
If you stick to .25 engines or smaller, you can get away with HS-81 for the elev and aileron, but use the bigger servos if you go with the .32 engine.
So, really nothing special about the servo's. No flutter problems seen at high speed.
