Based on my past experience building kits by these manufacturers, I would rank the SR-9 as the most complex. While not especially 'difficult', it is quite time consuming to construct; very well engineered, though (except for the gear mount, IMHO). Be prepared to spend a lot more time than any other kit you may have built. I recently completed one but have not flown it. However, from those I have seen fly, and from what others who have flown them say, it flys great.
While I have not built either Sig or B-USA Cubs (I have seen the kits, though), I have built other planes kitted by these companies; I have seen both Cubs fly however, and they fly like all Cubs - very well. Both should build fine. But. if I were to choose between the two I would select Sig due to Sig's quality of materials supplied in thier kits, design, construction, and kit completeness.
The Cub can be flown slower than the Stinson (it is a slower flying plane, anyway) due to the lighter wing loading.
