I have a question how light would this plane end up being if I used a 200watt motor that weighed 2.7ounces, hs-55 servo's, 8 gram reciever, and a 1320mah battery pack?

I have a AXI 2808-24 that weighs in at 2.7 oz. I am using a pro-light 2100, and hs-55's so you should come in about 1.5 oz lighter. Mine is 23.8 oz and that includes a tail wheel and epoxy on the critical joints (motor cage and landing gear).
By the way, this goes vertical at half throttle. Hovers at 1/3. I have never set it to full throttle.
Plan to mount everything you can in the rear of the plane, battery behind the spar.

AXI 2808/24 is rated at 157 Watts. However, I have been known to prop it to the point where it was pulling 25 amps on 11.1 volts. So it performs better than specs. But Watts in is not the same as Watts out. This motor is very similar to a Hacker A30-28S.
