Any of those you listed are about the same level of effort to build, and they all fly very well.
Sorta comes down to which service you want to model after. The Patriot looks nice in AF colors.... F-18 in Navy colors .... Obviously the SU-27 looks nice in Russian colors.
Also worth considering, the Juno F-20. A bit smaller, straight-forward build. Flys very well.
