Frank: One alternative to building/installing cockpit detail and a pilot figure would be to paint the canopy.
I have a large Kaos, upon which I have put a canopy. It is a SIG WW2 generic "fighter" canopy. I sprayed the interior with a gloss black. The results are impressive. Best of all, it eliminated the need to detail the interior. I would not use this method on a scale plane where it would be judged for detail. For sport flying it's a quick way to finish the ship.

If you're painting the inside of the canopy, you could use flat finish paint. It dries a lot quicker and in my experience, is a lot easier to work with. Since you're really looking at the "inside" of the paint, the sheen or gloss is determined by the plastic material of the canopy itself.
