Cut the traces leading to the motor, and solder two jumper wires across them. The same for the potentiometer if it's soldered directly to the circuit board.
On the Futaba 3004, I unsoldered the motor from the board and turned the motor 180 degrees. Reversed the outer pot leads and resoldered the motor.
