El Chupacabura

Ok guys a quick question for ya it says in the owners manual that a higher gear ratio will give you more (torque) acceleration but less top speed, the how come when you install the the 23 tooth high speed pinion (changing the gearing from 9.00 to 10.96) you can reach a higher speed ? It seems to defy my understanding of gear ratios...
