Question If I understand Li-po batteries right

I have a 29.6v, 3000mah, 8 cell, 10c, 88.8wh battery case that contains 2 of these packs in parallel.
Last year it gave me about 20 minutes of flight time, this year about 11 minutes.
If I understand all the battery information I should be able to change these packs out with the 5000mah batteries, however I found
none with the 10c, the lowest I found is 25c, so as I understand this is not a problem.

Is my thinking correct?

Correct, C rating is just how much current the pack is capable of handling (though 10c and 25c are considered marginal by today's standards). Running higher C rating won't hurt anything.
