Do I have to fully charge my LiPo?
I'd best most/all LiPo chargers do this, but mine will charge at full rate then slowly reduce the charge current.
I was just topping off my 2000mAh 3-cell pack. The charger input 500mAh in 15 minutes, then it took 40 minutes to put the last 500mAh in.
If I was at the field and eager to get my bird in the air, would it be ok for me to terminate the charge early so I could just get going? That won't adversely effect the pack will it? Just result in a shorter flight time. Right?

What you describe is called the CC/CV method. It is THE way to charge a Lipo at the current time.
CC=Constant Current until the pack reaches 4.2v per cell, then switches to....
CV-Constant Voltage, the charger keeps the pack from going above 4.2v per cell by lowering the current.
