theres two ways, most start with appying the cross weave tape first with overlaps downwing, ie start at the back.
then either use coloured tape, or monocoat - easycoat here in UK

spray the foam with M77 spray adhesive. Then cover with ultracoat. This is what Tuff Flight does.

Thanks but someone told me you can spraypaint it and then coverit with clear shipping tape and when your glider gets bad looking take the tape off and you have a hole new plane.

ahh, but when you take the tape off, you've still got a sprayed plane...
i just recovered my combat wing done in tape with coloured tape on top, after 2 years all it was is a EPP plane in a tape bag, i just slit the tape and pulled the plane out, not a simgle foam ball lost. all the dings, dents and warps came out and it really is a brand new plane

erm... theres pics of combat deltas at www.rcflyers.fsnet.co.uk. shows how we cover them in tape...
but basicaly you wrap a bit of tape around the TE, then lay the wing in the foam blanks to stop it warping, lay the next peice on top with slight tension, then the next bit half way overlapped, so you end up with double layers, same on the bottom, then a finishing bit on the LE. the coloured tape dosnt need to be double, all it does it stop UV light reaching the glass tape.
http://www.phoenixmp.com/models/peppi.htm this site is mainly gliders, but he has a EPP trainer, this ones covered in easy coat, and his EPP PSS look damn good covered that way too
