Default Lipo+e-flight esc+coballt 400= ???? Help

First off I am new to RC and have become totally hooked. I try to fly the Wattage Super Impress with the stock Cobalt 400 with 1100 mah 8.4 volt 7 cell. I just purchased a 11.1 volt 2600 mah 3 cell Lipo with a max discharge of 10c with 7c continous. I have read how important it is to not drain a lipo, will my e-flight 30 amp esc control that or should I just land often and check the battery? Also, what can I expect as far as flight time. Also, should I change the prop?

I know that is alot of questions and I apperciate all replies.
