Hi, yes two 12v cells to get 24v is in series.
Wire them up by the first battery's (+) positive to the second batteries (-) negative
Use a wire from the first battery's - as the 24v negative
And a wire from the second batery's + as the 24v positive
easy peasy

How would you use connectors to do this? I wish they would make an adaptor type plug so that you could plug in 2 or 3 deans ultra pugs into a "socket" and then get have one connector at the end for ESC.

If an adapter doesn't exist, then it's a case of just making your own to suit.
As long as you can buy the type of plugs and sockets you want to use, then any combination can be made to suit your needs.
