Help with a ELECTRAFUN please
This r/c flying in very new to me so I have no idea what is causing the problem I have with this thing.

The problem is that when I turn right I need to give it full up to avoid it diving into the ground, when turning left I need to give it bit of down to avoid it climbing to steep and stalling.

That's an odd problem, for sure...
Check the obvious first. Do the control surfaces move in the correct directions? Do they move independently of each other, that is, rudder makes only the rudder move, and elevator makes only the elevator move?
Try turning with the power off. I suspect that your problem is with the angle the motor is at. It's normal to angle the motor a bit to counteract the gyroscopic tendencies of the propeller. If you broke the motor loose in a crash and reinstalled it with too much of an angle, you'll get this kind of thing happening.

This is plane number 2, new not crashed yet, I wrecked the first one before I worked out what was happening.
It only has rudder and elevator surfaces in one piece and it does the same thing with the motor shut down as well.
I have the control rods out to the furthermost holes so I don’t over control it for now and only fly late afternoon with no wind.

Okay, this means the plane is either deforming when you move the control surfaces, or the plane's flying surfaces are extremely out of alignment. Either issue should be obvious with a casual visual inspection.
For right rudder to cause the plane to dive, and left to cause it to climb, the rudder/fin would need to be tipped to the right at quite a steep angle, when viewed from the rear of the plane.
