Amps drawn from a Li-Poly

Amps drawn from a Li-Poly
I have some 3 cell Li-Poly batteries 2800mamps that are rated at 6amps draw with 9 amps burst. Can anyone help:
How realistic are specifications, I am assuming I should be somewhat cautious with Li-poly's? I am used to abusing NiCads!
What will happen if I draw excessive amps, say double?
If I have an application requiring 20amps, would I be correct in assuming that I can put three of my packs in parallel.
Is there a book along the lines of brushless motors and liPoly batteries for idiots?
