Default motor angle

I am just getting back to electrics and I built me a Sig Funny, with an E flite 370 outrunner, it's really fast but when I give it powr it just climbs out of sight and I have to kill the motor to level the plane in flight, it also pulls to the right quite a lot so I have to control it with the rudder, I don't remember the thrust angle that I need to adjust it so I need to readjust it but I don't remember exactly how. Any help is appreciated, thanks.

most planes fly well with 3 to 4 degree's down and same degree's to the right looking from the rear
They will climb like crazy if you don't have the down on the motor
