I have entered the words (can't)and (they're) in my signature - for some reason they appear as (can"t) and (they"re). I've tried editing many times, no luck. What's up?

That's a bug we've had for years.

Here's how you can fix it: On the next line, I will place an apostrophe

Highlight that and copy it. Then paste it into your sig instead of typing an apostrophe
