Default How Do You Set Channels When Other Racers Are All Flying On 5.8GHz?

This is a noob question.
I am using Fatshark Attitude V3 Headset.
I have Fatshark 5.8GHz 250mw v3 Transmitter.
Do the headset and transmitter need to be on the same channel?
Doesn't each pilot need to be on different channel so you are not interfering with each other's video signal?

Here is the big question: How do I make sure my Transmitter and Headset are on the same channel?

Any help is greatly appreciated.
