Hi Bax,
the 18SZ manual states that, in line and spline curves, up to 11 or 17 points can be used (page 173).

My question is: how many points can I select when defining a curve in the programmable mixes menu?
Is it 11 or 17?

In a Pmix, we can use up to 17 points on the curve. The easiest way to find out is to see how many you can put in. It may be in a heli or glider where the number is smaller.
