Venom 45 cc
I have a new Venom 45cc from copperhead aviation, it came with a tapered seat spark plug, the head calls for a gasket plug, so what I'm finding is any matching plug with a gasket has a 3/4 hex vs a 5/8 hex to which the spark cap fits

That's the way it is and you won't find a 5/8" plug with a gasket. Often though, the heads are made to accept both types of plugs; the tapered and a gasket plug. If not, a machinist can chamfer the plug hole to accept the taper seat plug. Otherwise, you'll have to run the 3/4" plug and change the spark plug cap on your ignition lead.
