Well we would know the brand and model of your transmitter to give you more details. But your TX manual should mention something about throttle curves and how to set them up.

That, and/or add some exponential or set up a throttle curve. On some radios, (Futaba, Hitec) you will want to add negative exponential, on others it is positive. Same result, just that different brands use the terms backwards to others. You want to de-sensitize the throttle coming off idle.

Throttle curve, 5 point, try 10%, 20%, 30%, 50 or 60%, and 100%. Might take some messing around to get it closer to what you like, but that should leave you with something a lot closer than what you have.
Expo can help you around center stick, but the bigger issues are usually closer to idle and lower speed settings.
The better setup, one that leaves you with much better servo resolution, is one that will look something like the diagram. Many will start with something like this, then tailor to perfection using their throttle curve.
