Yes, one servo on the rudder and one on the elevator will be plenty of power. Choose servos that give you more than 100 oz/in of torque so you don't have any blowback and the rudder servo will be strong enough for ground handling at that strength.
Aileron servos on the Cub can probably be as low as 70 oz/in of torque since there's two and the ailerons are not full length.
