my plan for power setup

-do I need to go 75amp esc just in case to avoid burning up the esc? I will be running 6S lipos
- what C rating do I need on the battery pack?

Looking at the motor, it has the same specs as the Tacon 60, MP 60, EMP 60 motors. I have a Monster Power 60 in a low wing trainer I use for a glider tug. I use a 5500 6s battery, 18X6 APC "E" pro and get about 9 1/2 pounds of thrust. This only pulls 46 amp with a fresh battery static per my watt meter. Going to a 18X8 prop, thrust goes up to about 11 /3/4 pounds of thrust. and right at the limit of 60 amps.
With my plane loaded with a 2.3 meter 4 pound glider I am at almost 12 pounds flying weight. She takes off easy and climbs well. You r setup should give you just over a 1 to 1 power to weight ratio. It is not going to be any type of 3D machine, yet it should fly well.
I am running a 60 amp ESC with built in BEC in my plane. It runs (5) servo plus the release servo.

Thanks for the feedback, looks like the two most tempting motors (exceed rc and tucano) are sold out. bummer

I am waiting for them to come in again. If they do not show up soon I will order from Leaders. I have a couple orders and they were fast shipping and i got what I ordered.

I did a search for feedback on leaders motors and couldn't find anything, makes me nervous to buy stuff without feedback.

They are also sold at radical rc.

The motors may have 5oo different brand stickers on them. The blue ones look like the older Eflite copies or the Monster Power motors, I could be wrong though.
