I believe that when you turn the knob to search center >< the value that is showed by the programmer is not the servo's current center position but the position where the knob is.
After some more experimenting, it looks like that’s what it is. My servo’s center point is not actually changing as I thought. Apparently there is a “range” of where the knob can be in order to get the -><- on the screen before the search. Because of the "range," the value that shows on programmer is simply where the knob is rotated to that particular time and not the actual servo center point, as SpaceW said.
