I have a V6 ECU and a P80 # 2170. The GSU reads a maximum of 120,000RPM. Can anybody at JetCat, or with relevant knowledge advise me as to whether this motor/ECU combination can be uprated in thrust.

Go into the limits menu and re set the max RPM too 123,000 it rearly is that simple.
