Dual conversion uses an additional filtering process step over single conversion, and has more internal components. JR however has a process called ABC&W that acts much like dual conversion as it will continue to filter the signal until it is within a "window" of sorts. You can find quite a bit of information through an internet search on what the differences are between single and dual conversion. Tony Stillman also discussed this in the latest issue of R/C Report.
Which is better depends on many factors, including the area you are flying in, the type of model, and the set up of the model. Unfortunetely there is no way to tell ahead of time which will perform better. To find this out requires testing of your aircraft in the areas you fly in. In most cases however, both types will work very similarly. Both types should work well.
