Is there are good chart somewhere that show speed and torque and 4.8 AND 6v setups? I'm specifically looking at the JRPS 3121 servos. It shows .22 speed and 46oz torque (at 4.8 I assume) but I would like to know the values at 6v.

I don't know of a chart that includes both 4.8 and 6 volt readings. Yes, those ratings are at 4.8 volts. I don't have a rating for that servo on 6V, but generally there is a 15-20% increase in torque and speed going from 4.8V to 6V, so it would be around 53 in oz torque and around .19 sec/60 degrees.
