Saito 1.20 in CG Ultimate
Could any one with this combination make a recommendation as to where dual servos for the elevator should be mounted? In the tail?

I would wait to put them in till just before you cover it. Put everything on and see how the ballance is. If you can, put them in the tail just under the horizontal stab and use extensions to them with clips so they can't dissconnect. If it is not nose heavy, put them under the wings with pushrods. I put them in the tail along with the rudder servo on my G-202, but had to move them forward because of a ballance problem.
