I am to the main gear/ pinion point in my build on my trex 550e v2. I read the manual, but have also done research on proper main gear mesh.  From what I have been able to gather is, you set the main gear mesh using the high side of the gear.  How do I find the highpoint on the main gear?  Is placing a thin strip of paper between the pinion and gear a good way to set the proper mesh?

Finding the high spot is pretty easy.

Set the gap pretty tight and rotate the main gear till its the tightest, mark that spot.

Run a piece of notebook paper through the gears at that point. It should come out not wavy, not mangled, but nicely accordianed with crisp edges.
