If I have a motor that is recommended to use a 40 amp ESC and I put a 60 amp ESC in the vehicle, will any harm be done to anything in the plane? In other words, is overkill in an ESC going to damage anything?

No, you won't be causing any problems by upgrading to a 60A ESC. Just check that new unit matches or improves on BEC current (don't replace an ESC with a 5A BEC with one with a 3A for example). Also, don't forget that ESCs have a maximum number of cells that they can handle, so check that your new ESC is a match for that as well.

ESCs only allow through the current demanded by the motor and prop.. a larger ESC cannot force the motor to draw more current. You could put a 10A ESC or a 200A ESC on a motor propped to draw 10A... and with either ESC the motor/prop would only draw 10A.
