how fast do these bikes go?? and do they turn over easy??

They can go 30+ mph depending on the gearing and the motor. Maybe a lot faster.
If you mean do they wheelie? Yes if you have enough tourque, little wheelspin and the right gearing.
If you mean do they fall over? Yes but they have "crash bars" that keep them from falling over completely. Some rubber is always touching the pavement so you can get them going again unless your crash bar bent due to a BAD crash.

i meant do they flip like fall sideways. i thought they would wheelie pretty good because they are very light with big engines. also, are you able to come to a full stop with them and not tip over sideways?

The crash bars support the bike while at full lean into a turn so the bike will not dump and it is highly unlikely that they will flip over. Once you get the bike setup correctly it is generally tough to flip the bikes in any direction because of their huge 1/5 scale mass and gyroscopic effect (that is, assuming you're running on smooth pavement). I have run into my buddies frequently while racing and you usally can drive away undisturbed and still stable on two wheels.
