I'm scratch building a 1/4 scale Fokker Dr1, top wing is at 2 degrees pos, middle and lower are 1.5 degrees pos. The landing gear wing is 0 degrees, and the stab is 5 degrees pos. I'm useing these angles from research on the original, and from drawings of a 1/6 scale VK/Proctor Dr1 kit. The plane will come in at 15 to 17 pounds, powerd by a saito 1.80. My question is, what are other 1/4 scale kits or scratch planes using for incidence angles?

Those angles sound reasonable.
The biggest problem I've seen with the Dr-1 is take off. The ground angle is steep, and the mass of most of the plane is directly over the landing gear, with a high thrust line. It wants to rotate around the axle and nose over.
It requires some up elevator to keep this from happening when beginning the takeoff, but then the elevator must be released, as you don't want to take off stalled.
And the ground steering is difficult. It's a ground looper.
On landings, mine almost always turned over, due to the mass over the axle.

??? The landing gear is well behind the leading edge of the top wing. The balance is great, it just looks odd. It doesn't have a tendancy to tip over. The only problem is the narrow gear and the tendancy to drag a wingtip.

Here are some pics. The fuse. is very similar to the VK kit. The wings have false cap strips over the spar to give a scale effect when covered. The cowl and upper fairing I made using fiberglass, the horns and hinges I made using aluminum, the dummy rotary and the machine guns I made using balsa(the finer detail isn't that great, but I want to see it fly before I go the extra mile). The tail skid pivots and swivels(hopefully it will track when using the rudder).One of these days I'll get around to finishing it.
