Andrew, A couple of points that concern me. I didn't see the wing pinned down to the board at all. Keeping the spars pinned down and flat is what builds the wing straight. Also, when you remove the wing from the board and then sheet it your are taking a huge risk at building a twist into the wing. Right now the wing is very fragile and won't get the rest of it's strength until you sheet the wing. I haven't seen the manual for the LT-25, but I'm pretty sure it's close to the LT-40 and most other builds of this type. The reason they have you sheet the wing while it's still pinned to the board is that way the wing will be built straight and true. My advice would be to pin the wing back to the board over the plans and sheet it properly. Trust me, having the sheeting off of the wing won't help you in any way when it comes time to join the wing halves. Sheet the wings like instructions tell you to do, and then join the wing halves.
