If i dont use my LiPo batteries for 2 weeks, then they should be fully charged before storage?

I also have NiMh batteries to be stored.

I generally dont worry about 2 weeks storage. Lipoly packs dont have the self discharge rate as NiMH packs. Some say to store NiMH packs with 50% of capacity.

So if I have a li-po fully charged on Monday, I can take it out to the field on Friday and it's still holding a full charge? I think I'm gonna like these things

I have a small fridge that I can dedicate to lipo batteries, should I store them even when fully charged in this said fridge or just store them in there at the 3.8V per cell storage voltage if not used for more than a week or two...?

That is correct. Over just a few days like that they will lose almost no voltage. As recomended above though, if you are not going to fly them for any amount of time over a week or so, it is best to take them down to about 50% of their capacity for optimal battery health.
