If you can run everything on high like you said, you should turn on vsync, it cleans up the chopped frames to make the BEST picture possible. Even with it off there still might be a few unnecessary frames. Vertical synchronization simply cleans up the picture, but if you have a good gpu, like you do you don't really need it because it can process the video fast enough, but it still makes the picture better overall, you probably will not be able to see much of a difference, but on lower end gpus you will. Here is a good definition: Vertical Synchronization is an option found in many games that allows the frame rate of the game to be matched to the refresh rate of the monitor. Generally, allowing VSync provides the greatest stability, but turning it off can allow for much higher frame rates. The downside of the greater speed is the potential for artifacts to develop.
