The 11X8 is a bit much prop... Try an 11X5 or 11X6 it should cure your accelleration problems. If you have the clearance, try an APC 12.25 X 3.75. It should LEAP out of the water. :) BTW... try shimming the floats to give the wing +1 or 2 deg incidence at rest in the water with a full fuel tank... it WILL help
