Does this plane need ruddervator? Could I just use one HT servo for eleavtor? Or if I want to use the V-tail mixing would 2 Hitec HS-35 55oz of torque?

If I remember correctly, I seem to recall that the plans show an alternative way to control the tail surfaces. One servo works both elevators together by means of some kind of split push rod. For a rudder, the plans suggest cutting off the "stinger" portion of the fuselage vertically just aft of the horizontal stab, and hinging it. Then use another servo to drive this stinger as a rudder. It looks like a neat idea and should be fairly effective.

I would go with the v-tail mixing. Those servos will have plenty of power.
