I imagine most of you use some type of hatch to hide the un-scale things we need to fly our planes (glow adapter, retract filler, etc..)..

My question is, what is the best way to do this? I figured I could build a box and put the cover on hinges but I'm stumped on how to do the latch. I don't want to do a screw.. Are there better ways?

I've used the Goldberg hatch hold downs, both the angle ones and straight ones. In the right application, they work pretty good.

The best thing I have found for hatches is the BVM hatch latch, along with sonic tronics door hinges...

I goto Lowes and get small cabinet latches. you push the hatch in and it locks you push it in again and it unlocks. you have probaby seen similar on entertainment centers and the such. But i like the magnet idea even better.
