What can I do with my LiPo packs that are not being flown over the winter to ensure they are ready for next season?

Charge and store. Lithium batteries hold a charge far longer than other types and through the winter months is no problem for them.

I thought I read somewhere that when LiPo's are not used the deteriorate?

LiPo should be stored with a partial charge, 50% to 75% of capacity. Some LiPo chargers have a charge/discharge setting for storage

ALL batteries will deteriorate with time whether they are used or not. Storing them between 40º and 50º F delays deterioration somewhat.
