Incidence is a degree of measurment of the wing and rear stabilizer as compared to the fuselage. If you level the fuse and look at the wing or stab and the leading edge of either is higher than the trailing edge than you have positive incidence. If the trailing edge is higher than the leading edge than you have negitive incidence.

along with right and left thrust.

my birds are 0 on the stab and wings and 2-4 degrees of right thrust
right thrust= ( so that the plane flies straight on up lines on pulling to one side)
up thrust usually needed to keep the bird from pulling to the wheels in a up line (caps and ultimate usually need this more than other types)
stab postive usually is on an ultimate

also check out this to help trim your birds:

The only way to tell whether or not it is from incidence is to measure the wing incidence with a meter. Hanger 9 sells one for about $50 that is adequate.

As mentioned earlier, level your fuse out (you can usually find an area between the cowl and the canopy to put a small level and raise the tail until the fuse is level. Once that's done, you can measure the wings. Some planes have a LITTLE up incidence (front of the wing is slightly higher) but most should be completely level with the fuse. If you have a mid-wing plane, there's probably not much you can do to fix it, just live with it. If its a high or low wing model, you can ad shims to properly level it out.

Its rare, with today's ARF quality, to find one with a wing incicence problem. You should also check the rear stab, and if you have a problem, its probably there. To adjust it, assuming the stabs are removable, just open up the dowel hole in the fuse in the proper direction... if your plane is going down on power, then you'll need to lower the rear end of the stab.

With all of that said... if your plane is flying straight and level at about half throttle, but dives down when you give it full power, you might look at putting a washer or two on the bottom side of the motor mount.... it could be a very simple thrust angle adjustment. I'd start there first... its easy to adjust, and easy to remove it if you over-adjust.
