Just like the title says. I bought a Tornado BB with the Vertex 18 motor. On the directions it recommends %15- %20 nitro fuel. So what would happen if I put in %30 nitro fuel or higher nitro fuel?

Nothing. If you run 3-4 tanks of it then something may go wrong indeed. I run 25% in my 18ss engine and everything is fine.

Used 30% on a Jammin .12 engine, nothing happened.? The Instruction Manual said " Only use fuels upto 20% "....

I used 30% from the start, didnt switch...Stiill runs like new 2 gallons later...

The only thing that happens is that the timing is advanced. If you go up in Nitro by that much though, you should be adding a head shim. Sometimes that is not enough to compensate, so then also going to a colder plug usually corrects the timing enough if just adding a shim didn't.

What you can experience by advancing the timing too far is detonation. That is where the fuel inside the chamber burns much too soon - well before the piston hits TDC (Top Dead Center). This will cause all kinds of stress on the conrod and other internals.

What RCtruckRacer is right and also instead of adding a shim you can get a colder glow plug. It should do the job cause .18 engines can handle more nitro percentange than .12 and .15 ones.
