I bought several brushless motors at a swap meet, and a few online. Seems it has been hit or miss which ones will turn a large prop w/out a gearbox and be light and quiet. All the Hobby Lobby Uberall Nippy outrunners are excellent and are absolutely whisper silent and powerful, but are discontinued. I bought a small, blue outrunner (unknown make) for my GWS Pico Moth, and it turns a 9x6 slowflyer prop silently and with authority. On the other hand, I have several other outrunners (Welgard, etc) that are supposed to fly heavier planes but scream and make as much noise as an .049. When bolting on a longer prop they "cook," emitting a burning wire smell and the case gets hot enough to sizzle water. From what I can see, a skinny, but large diameter "rotor" or whatever you call the portion that turns will spin a bigger prop and not heat up. The short, fat motors all seem to fry with anything other than half A props. Because of the neighborhood I fly in, quiet operation is an absolute necessity. How can I be sure a motor I'm purchasing will be silent?

The greatest part of the noise is coming from the prop, not the motor. That said, the magic to flying quietly is to get a motor that will spin a larger prop with increased pitch, which means decreased rpm. I prefer motors in the 850 - 1200 kvm range for my planes, spinning 10 inch to 7 inch props, depending on the application. But you need to get a WattMeter so you will know when a motor and esc is properly working, because if the motor is hot enough to sizzle water, you are pulling WAY too many amps out of it. You'll only get to do that for a short while, then you will pull the magic blue smoke out of the motor and esc, too.
