The rockets need to be as close to the line of the CG as possible, you don't want the car to end up like Wan Hu.

ui've built a few rocket cars in my day, and what seems to work best is a long chasis with the motor toughly in the middle, with the thrust going up. (about 15-30 degrees) This keeps the car down, without the aerodynamic drag of spoilers.

yeah I had it as close to the cg as possible, and poited downward, so it would propel the car to the ground, not exactly what happened lol

Yeah it should've been pointed straight. Pointing it downward just spun the car, cool video though.

The real stability secret is getting the rocket engine placed as far forward as possible, but that's hard to do if you don't want to melt your car.

lol dude nice redneck style fuse, i used to do that with my real rockets but now its all electric start, easier. also i did that with an old model car, we made a makshift sky out of paper and duct tape, then cut a hole in the windshield for the rocket motor, it took off down the walkway bounced off the snow bank and came right back at us, then we put it on a wire guide thing and it busted off and came right at my friend, we used D sized engines dont know the burn times though. i think i still have some vids i will check a post later.
