Well, for sailplanes two classics thar I enjoy are:
-- Old Buzzar's Soaring Book by Dave Thornburg and
-- Model Glider Design by Frank Zaic
The first focusing more on flying sailplanes and the other more on designing and trimming them.

I think there's also a Martin Simons book out that gives a lot of depth on the why's and how's of soaring. If you want to go more into design of model airplanes in general, there's an Andy Lennon anthology that's got a lot of theory AND practical stuff -- it's available from the major modeling magazines. And If you want more info on building and finishing techniques, the Harry Higley series has some good coverage there -- very practical books with abundant photo illustrations.

The RC Soaring Echange has also been a great source of information.
